Be truly paleo--grab a sharp stone and start in with the intestinal
contents and the liver. Leave it there for a couple days and comeback for
the belly meat--what little there is. After a time you will notice
maggots--they are extremely nutritious and should be consumed as taste
demands.

Seriously, skinning and dressing animals is a pretty intuitive thing and
there are only a few tricks--but reading directions in a book (or online)
is nothing like having someone show you what to do. Experience is the best
teacher in things paleolithic, methinks. ;)
