Hello All:

Thanks to all the people who quickly responded to my query.  Here are
the results:

4 persons said they use "Betty Crocker Potato Buds"
3 persons use Barbara's Instant Potatoes (they are also sulfite free;
can be found in Safeways, Health Food Stores, Whole
Foods Markets)
1 uses "Idahoan (regular)"
1 person has also found "minimally processed dried potato flakes in the
Kosher for Passover section of her supermarket"
1 person pointed out that per a GF list, "as of 2/96 Hungry Jack's
Instant Mashed Flakes were GF"
1 person said that Trader Joe's "Instant Mashed Potatoes" are GF
1 person was helpful to point out that one could possibly use potato
flour, but not potato starch "(although if the amount is as small as a
teaspoon, you could probably just ignore it!)"
And last but not the least, 1 person pointed out that we can use a "Real
Potato" -- just microwave it and use the amount needed in the recipe;
she has tried it and it has worked for her!

My question was:
I am looking at Bette's bread book and see quite a few interesting
recipes that use "Instant Potato Flakes".  What brand is GF?  Is there a
substitute -- e.g., for 1 teaspoon of instant potato flakes, can I use
some potato starch or potato flour?
