when the surface of a 1 cm thick piece is dry to the touch and the piece is
still pliable ,it is half dry.
by weight a piece that is dry hard is 1/6 of the fresh weight, half dry is a
third of fresh weight.In the fridge hanging ,  you can keep a half dry piece
for a long time because it will slowly continue to dry.
