I don't know the answer to that question, but as I sometimes eat
ground beef (sold at cheap price by my local supermarket), I try to
respect the following safety precautions:

1] Eat only certified organic meat, as animals are healthier and bred
under better sanitary conditions than conventional animals.

2] Consume ground meat within 24 hours (and keep meat in the upper
part of the refrigerator).

3] Do not eat meat whose odor or taste is suspect.

So far, in 2.5 years, I have eaten about 25 kg of raw ground beef and
250-300 kg of raw meat or fish without problem, which doesn't mean
that nothing will ever happen, of course.
