Up here in Dryland Ranching Log Building Country, it is well known by the
old-timers that if you are going to restore a log cabin properly, you have
to use cow manure to chink the joints between the logs.   It is better than
clay because it moves with changes in the humidity and won't crack and fall
out.   Only city slickers try to use cement.   The trick to success is to
find some fairly fresh but not too fresh pies, and they don't sell-um in the
stores.   Horse droppings are too fibrous and dry to start with, even if you
add water.

After all the masonry discussion on mortar and grout, how about chinking ?
