Since saturated fat is the kind that mammalian bodies make when
they store energy, it makes sense that fatter animals would have

The typical ratio of SFA to total fat is between 30 and 40
percent, even though the total amount of fat varies. The main
exception is the squirrel.

SFA is 40% of total fat.
The ground beef products have a somewhat higher SFA to total fat
ratio, but not that much. The ratio for top round is comparable
to that of caribou, deer, and elk. Unfortunately, we don't have
organ meat values for game animals for comparison.
The table below give aggregate values, I guess. It's interesting
that the ratio of saturated fat to total fat is highest for nuts.
