FYI, the King Arthur Flour Company offers a line of gluten-free mixes for a
range of things; from sandwich bread and pizza to cakes and brownies. Haven't
tried them, but the catalogue has some nice customer testimonials about them.
And King Arthur seems to be a great company (I have no connection to them, by
the way, except as a customer), uses all good stuff, is careful about its
products. Look for the Gluten-Free Pantry Mixes. I don't know how
lactose-free they are, but you can call the company; they're really good
about answering questions and helping out.
