DAIRY FREE BREAD RECIPES
I have had success substituting water for milk in most bread recipes. Milk
is usually added to a bread recipe for nutritional value and can be omitted.
If you choose, you can easily replace the milk with water and a powdered
soy-type milk or with a liquid soy-type milk. This is my bread machine
recipe. It works well for me and always turns out good.
WHOLE WHEAT FRESH BAKED BREAD
1 1/4 cup water
2 tsp. yeast (compressed)
2 Tbsp. honey
1 tsp. salt
2 Tbsp. Better Than Milk Powder (light/tofu milk w/o dairy --- the regular
has dairy)
2 Tbsp. oil
3 Tbsp. gluten flour
3 cups whole wheat flour (I grind my own using hard white wheat; you may use
50/50 whole wheat and white OR all white if you prefer)
1/8 tsp. ascorbic acid (optional --- assists in rising)
1 Tbsp. lethicin (optional --- assists in rising)
Bake on regular setting in bread machine. Adjust your flour amounts
depending upon the moisture content of the flour. (If your flour contains
quite a bit of moisture you may need to add from 1/4 c. to 1/2 c. more.
Check the dough after mixing to see how "sticky" it is; adjust amounts).
If you prefer using a liquid soy or rice milk, omit water and Better Than
Milk - lite powder.
Powdered soya milk powder can be used instead of Better Than Milk powder.

MANITOBA BREAD
1 cup water
1 Tbsp. oil
1 1/2 tsp. honey
3/4 tsp. salt
1 1/8 cup whole wheat flour
1 1/8 cup bread flour (or all purpose flour)
1 Tbsp. Better Than Milk - lite powder
1/4 cup cracked wheat (soaked for 1/2 day)
1/3 cup sunflower seeds, unsalted
1 1/4 tsp. dry yeast
1 Tbsp. liquid lethicin
2 Tbsp. gluten flour
Bake according to bread machine method/instructions.

BRITISH COLUMBIA BREAD
1 1/4 cups water
2 Tbsp. oil
2 Tbsp. molasses
1 tsp. salt
1 1/2 cups whole wheat flour
1 1/2 cups all purpose flour
1/2 cup oatmeal
2 Tbsp. Better Than Milk - lite powder
2 tsp. dry yeast
2 Tbsp. gluten flour
1/2 cup walnuts, chopped
1/2 tsp. cinnamon
Bake according to bread machine method/instructions.
